The Controlled Atmosphere (CA) is a storage technique in which the oxygen level is lowered while the carbon dioxide level is raised. It can be preserved under the conditions of quality and freshness of fruits and vegetables without requiring any chemistry. Compared to normal Cold storage, it can be stored for as long as 2 to 4 times with many product conditions.
Van Amerongen's DynamicCamic system sets the conditions interactively (rather than fixed) during storage. The equipment used for the Dynamic Storage System operates according to the fi nal state of the fruit in the cold store. Storage is in the direction of the fruit's reaction. Oxygen levels below 1% do not pose a hazard since the O2 concentration is set by the system against the danger of overdosage according to the response of the spillway.
Ultra Low Oxygen
Ideally, pears are stored at 1-3% lower oxygen levels than most apples at 1.5%. Ultra-Low Oxygen (ULO) storage is referred to as Ultra Low Oxygen (ULO) storage when the conditioning is done at lower levels. The ULO storage technique is used for long-term storage of apples, pears, blueberries, and other fruit juices in gas-tight, carefully made cold stores.
